Building a Wood-fired Masonry Oven
The oven construction is complete, but the bakery construction is stalled. As we proceed with that construction, we'll post more images here, so keep returning. It's way too late for any critical comments . . . the deed is done and can't be undone, but we'd like to hear about your experiences in constructing your oven. If there ever is "another time" when we'll build a different oven, your comments might make a difference in how we do things then.
Construction of the bakery might move along more quickly if there just wasn't so much interference from the Inspectors, especially this one who is particularly diligent about being in your face. He thinks that the breads from the oven are under his personal inspection venue. He expects that he should sample every batch, just to be certain that it meets or exceeds our high standards. Sometimes you just have to grin and bear it.
